Popie's Cajun Turkey Butter Rub

Are you tired of the same old turkey recipe you've been having for years and years? Are you wishing for something with a more modern and unexpected flavor explosion? Well, our Voodoo Mojo Smoky Cajun rub will knock your socks off! This recipe is for a 10-13LB turkey.

Baking your turkey doesn't have to be difficult if you plan ahead. You can turn out a moist and delicious turkey when properly seasoned with Oma & Popie’s Voodoo Mojo butter rub and baked it the oven. It's so simple that even novice cooks can handle this process.

If you are frying do not use the butter mixture as this will burn your bird, use as a dry rub & oil and let sit overnight in your refrigerator wrapped tight in Saran warp.

Soften up a stick of butter at room temp and add 2-3 tablespoons of Voodoo Mojo seasoning into a small mixing bowl and whip it up until smooth.

Where this Cajun turkey butter rub really shines is when grilling or smoking by using the Spatchcocked method. This style means that you "butterfly" your turkey. Using kitchen shears or a sharp knife, cut along both sides of backbone; discard backbone. Turn turkey breast side up; press firmly against breastbone with the heel of your hand so that the bird is splayed open, butterfly style.


Next, you'll want to use your hands as you thoroughly rub the mixture on the skin of the bird and especially work it in under the skin around the breast. Be sure that you carefully replace any skin that gets disturbed during this process.  Cover and let sit overnight in your refrigerator.

Before you are going to cook, let it set out to room temp for 30 min. If you are using a pellet smoker, we prefer maple/hickory combination. Next set it at 350F and preheat with the lid down. Place turkey directly (making sure you coat with cooking spray ) on the grill skin side up and roast for 2-3 hours or until internal temp of 160F.

Cover with foil and let rest for 20 min and enjoy. Not only will this be a healthy to eat bird but it'll be loaded with flavor, juicy and an unexpected delight for your family and guests.
