Melonie’s Spring Greens with Grilled Chicken

Fresh mixed spring greens get tossed with grilled chicken, dried cranberries, crunchy candied walnuts, red onion, cherry tomatoes, feta cheese and the Oma's Secret Vinaigrette. This makes one incredible mouthwatering salad!

Serves: 6

Salad Ingredients:

  • 2 Chicken Breasts, seasoned with lemon pepper grilled and diced

  • 1 (8 ounce) bag mixed spring greens or mix your own

  • 1⁄2 red onion, sliced into rings

  • 1 cup candied walnut or peacans halves

  • 12 cherry tomatoes cut in half

  • 6 ounces’ feta cheese, crumbled

  • 1⁄2 cup dried cranberries

Vinaigrette Dressing Ingredients: (2 to 1 mixture)

  • 2/3 cup of Wingin’ It or your favorite O&P sauce

  • 1⁄3 cup olive or avocado oil

In a large salad bowl, toss chicken, spring greens, red onion, candied walnuts and cherry tomatoes. Top with feta cheese and dried cranberries.

To make the dressing: Mix together in a small bowl or bottle the oil and sauce. Drizzle over salad. Refrigerate any unused dressing.
