Drunken Bourbon Meatballs with Raspberry & Mango - A perfect dish for potlucks
Prep time: 20 mins Cook time: 20 mins Total time: 40 mins.
1 lb. ground beef and ground pork
1/2 cup crushed Ritz crackers or bread crumbs
1/2 cup onion, chopped
1/2 teaspoon salt
Cracked pepper to taste
2 Tbsp. olive oil (for browning the meatballs)
1/2 jar of Leaping Lizard's Raspberry Mango Pepper Jelly - Homemade by Dorothy
1 cup Drunk Uncle Marinade
1 Tbsp. molasses
1/4 cup bourbon
Step 1: Set oven to 350F. Mix first six ingredients.
Step 2: Warm oil olive in skillet and quickly brown meatballs in batches.
Step 3: Transfer meatballs on baking sheet and finish in oven for approximately 10 minutes.
Step 4: Mix last four ingredients in skillet that you browned the meatballs in.
Step 5: Bring to simmer and gently simmer for about 10 minutes or to desired thickness.
Step 6: Remove meatballs and pour sauce over them in serving dish.
