Bacon Wrapped Jalapeno Popper Stuffed Chicken


Prep Time: 10 minutes Cook Time: 20 minutes Total Time: 30 minutes

Juicy chicken breasts stuffed with melted cheese and jalapenos wrapped in crispy bacon

Ingredients:

  • 4 (6 ounce) chicken breasts, butterflied or pounded thin salt and pepper to taste

  • ¼ cup Hawt Mess sauce

  • 2 TBL roasted jalapenos (fresh or pickled are fine too) diced

  • ¼ cup each cream cheese & shredded cheddar cheese

  • 8 slices bacon

Directions:

Step 1: Marinate chicken in Hawt Mess sauce for 1 hour. Step 2: Mix jalapenos, cream cheese and shredded cheese.

Step 3: Lay the chicken flat season with salt and pepper, spread divide jalapeno and cheese mixture on the chicken breasts, roll them up and wrap each in two slices of bacon.

Step 4: Baste with sauce and grill over indirect medium heat, with the lid down, until the bacon is crispy and the chicken is cooked (160F to 165F), about 20-30 minutes, baste again the last ten minutes. You can also bake in a preheated 400F/200C oven on a wire rack on a baking pan until cooked, about 20-30 minutes, turning the oven to broil for the last few minutes to ensure that the bacon is crispy.
