One Pot Spicy Cajun Chicken with Rice & Veggies

Arroz con Pollo the Lowland way
4 boneless skinless chicken breasts pounded to even thickness
1 ½ cups of Oma & Popie’s Bayou Venom Wing Sauce
½ cup chicken broth
1 cup brown rice (uncooked)
2 whole yellow pepper chopped in large pieces
Small bag of baby carrots
Roughly chopped cilantro
Step 1: Drizzle oil in skillet enough to cover the bottom, heat up and sear chicken breasts for about 1 minute on each side over medium-high heat, just long enough to brown each side of the chicken.
Step 2: Transfer to a plate. Reduce heat to medium-low and add rice, carrots, peppers, wing sauce and broth, stir to combine.
Step 3: Place chicken on top of the rice, cover, and simmer for 20-25 minutes until liquid is absorbed and chicken is cooked through. Sprinkle with cilantro and serve.
